Mike Ross

Operating Partner

Mike Ross has over 25 years in the hospitality industry. He began his career in Boston, MA working for the Back Bay Hilton Hotel. He attributes that experience with providing him with his passion and strong culinary foundation.

Mike moved to Atlanta with his wife and son in 1986 and transitioned from the Hilton Hotels to working for several notable restaurant groups, including Peasant Restaurant, Houston’s and Liberty House.

Mike joined Innovative Restaurant Concepts / Rio Bravo in 1997 and, afterwards, continued with Killer Concepts / Ray’s on the River. It was 2001 when Killer Concepts converted its downtown store, Siesta Grill, into Ray’s in the City where Mike served as the Operating Partner and Director of Operations.

After a brief hiatus, Mike is back as the Operating Partner for Ray’s in the City and looks forward to the City’s continual growth and that of the new Ray’s Rio Bravo.

Dean Berthelot

Executive Chef

Dean Berthelot, a Louisiana native, began his culinary career in 1991 by working as an unpaid apprentice to an award-winning French chef at the 5-star Royal Sonesta Hotel in New Orleans.  Upon completion of his two year free apprenticeship, he was hired as a roundsman in the fine dining restaurant, Madam Begue’s.

In 1995, Berthelot took his first Executive Chef position at New Orleans’ House of Blues and was the Corporate Training Executive Chef position, opening 6 units.

He moved to Atlanta in 2001 with The Cheesecake Factory, where he honed his skills in a high-volume and quality-product concept.  He began his career with Ray’s Restaurants in 2003, working as Executive Sous Chef at Ray’s on the River and then moving downtown to Ray’s in the City three months later to open it as the Executive Chef.

Berthelot left Ray’s in 2010 to serve as Executive Chef for the four Google facilities located around Atlanta. Five years later he returns to Ray’s as leader of the culinary team at Ray’s in the City, with a mission to take the dining experience to new heights.

Time away from work is enjoyed with his two teenage daughters and wife of 20+ years.  Adding to the family are his two dogs and two cats…but, if you ask who really holds the key to his heart, he’ll answer “Cocoa Bean,” his little Chihuahua.  He’s a big sports fanatic, particularly loving his LSU teams and the New Orleans Saints.

Berthelot enjoys everything about cooking…preparing, creating, and eating.  He truly believes that he is blessed because he gets paid for doing his hobby each and every day.

Lindsay Derstine

Sales & Events Manager

Lindsay has spent her entire working career in the hospitality industry, giving her experience and extensive knowledge in all aspects of operations. She attributes much of her passion for excellence and high standards to her 8 years with the Darden concept, Seasons 52. There, she worked diligently from a hostess to restaurant opener, trainer, and eventually management. There were a few steps between there and Ray’s Restaurants, but, when the opportunity came, it was the perfect fit. “Coming on board with a reputable Atlanta restaurant that is privately owned just seemed right. There is something about the family environment and sense of ownership you get when you work with a small, yet successful, brand that you don’t get anywhere else,” says Derstine.

Living her life all over the world provided Lindsay with the ability to connect with people from all walks of life and gave her a true love for people. Becoming the Sales and Events Manager for Ray’s in the City in 2017 was natural and it gave her an opportunity to connect on a professional and personal level with her guests. Lindsay’s top priority is creating a personalized and special experience for each of her clients thru private dining, cocktailing events, catering and other special occasions.
